Wine Recipes

Red Grape Wine Recipe



Ingredients:
  • Black grapes - 1 kg
  • Sugar- 1 kg
  • Normal Wheat Grains - 50 gms
  • Cloves - 5 nos

Preparation:
  1. Wash grapes and remove stems.
  2. Fill the clay jar with grapes and sugar layer by layer and add cloves.
  3. Clean the wheat grain in water and tie it in white cloth and put it in the clay jar along with the grapes and sugar mix.
  4. Open every day for 15 days and stir it nicely with a wooden spoon and close it air tight and store in a dark cool place.
  5. After 41 days, filter the liquid to get clean red wine, through sieves covered preferably by cloth, making slow filtration for clearer wine.
  6. Keep again the filtered wine in the same jar cleaned, for another 3-4 days.
  7. Fill the clear red wine in clean dry bottles to serve.

White Wine Recipe Recipe


Ingredients:

  • Black grapes - 3 kg
  • Sugar - 4 kg
  • Yeast - 1 tsp
  • Boiled and cooled water - 10 bottles
  • Egg white and crushed shells - 2 eggs
  • Whole wheat - 1 kg

Preparation:

  1. Mash the grapes with a potatoe masher or wooden spoon or use ur hands and mix it in the water.
  2. Add 2 kg sugar, yeast dissolved in a little water, egg white and shells.
  3. Keep them in a porcelain jar for 21 days. Stir it daily.
  4. Strain the mixture.
  5. While straining it, use a muslin cloth and a siphon tube to transfer the mixture so that the sediments at the bottom of the jar do not get disturbed.
  6. Add the remaining 2 kg of sugar and keep it for another 20 days.
Ginger Wine Recipe

Ingredients:

  • Sugar - 1.4 kg
  • Brandy - 75 ml
  • Water - 4.4 ltr
  • Fresh yeast - 1 tsp
  • Lemon (zest and juice) - 1 no.
  • Ginger (peeled and bruised) - 40 gms.
  • Raisins (stoned and chopped) - 110 gms.


Preparation:

  1. Add the water, sugar, lemon zest and bruised ginger to a very clean saucepan. Bring to the boil, simmer for 1 hour.
  2. Remove any scum and transfer to a large bowl. When it is luke-warm, add the yeast and leave overnight.
  3. Next day, strain the lemon juice and add to the mix along with the chopped raisins. Place everything in a suitable vessel.
  4. Stir the wine every day for 14 days. Add the brandy. In a few weeks it will be ready to bottle.

Pineapple Wine Recipe


Ingredients:

  • Pineapple - 1 kg.
  • Water - 5 bottles
  • Sugar - 2 kg
  • Yeast - 2 tbs


Preparation:

  1. Wash the pineapples and cut into small pieces. Don't remove its skin.
  2. Boil it for about 5 minutes with water and 1 kg sugar.
  3. When cool, add yeast and store in an air tight mud vessel for 20 days.
  4. Stir the content daily with a wooden ladle.
  5. After 21 days, filter the wine through a fine cloth.
  6. Do not squeeze the contents.
  7. Add the remaining sugar and store it for another 21 days without stirring.
